Fruit Cookies
This is a recipe for a double batch. I always make alot and then freeze them in snack batches! Use organic ingredients if possible.
- 1 cup of butter
- 2 cups of brown sugar
- 3 eggs
- 2 teaspoons of vanilla ext.
- 1 1/4 cups of all purpose flour
- 3 tablespoons plain Soy powder (Trader Joes)
- 1 teaspoon of zest of tangerine
- 2 tablespoons of molasses
- 2 1/2 cups of dried fruit
- 1/2 teaspoon of salt
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1/2 teaspoon of cloves
- 3 cups of plain uncooked oatmeal
- 1/4 cup of Hemp seeds (www.nutiva.com)
- 3 tablespoons of dried Hibiscus flowers
- 1/2 cup of unsweetened Organic coconut flakes
For the dried fruit I use a combination of blueberries, strawberries, blackberries, cranberries, pineapple, cherries, raisins and apricots. But whatever is
your favorite or whatever you have on hand will do.
Mix all wet ingredients together and add brown sugar. Sift together flour, soy powder, salt, baking soda, cinnamon and cloves. Add this dry mixture to
wet mix and stir by hand until moist. Then add zest, hemp seeds, hibiscus flowers, coconut flakes and dry fruit. If mix needs more moisture add a
little molasses at a time, but mix should be clumpy and stick together but not wet.
Drop on baking sheet and bake at 350 degrees for 12 minutes. The cookies should fall and be flat and crunchy.
