We make fresh juice as much as possible, fruit and vegetable. One of our favorites is fresh organic carrot juice. But we always feel like we are wasting good stuff when we throw out the pulp from the juicer. This is a wonderful recipe to use the pulp that is left from fresh carrot juice.
Coconut Carrot Crackers
2 cups of organic carrot pulp
1 1/2 cups of organic unsweetened coconut flakes
1/2 cup of your favorite blend of seeds ( I used pumpkin, sunflower, sunflower with tamari and flax seed) You can also use nut if you choose.
1/2 cup of organic raisins
2 tablespoons of organic brown rice syrup - this amount can be modified depending on how sweet you want the
crackers and how sweet the carrots were that you juiced.
Mix all of this well. The mix should be a little sticky but not wet.
You can dry these in a dehydrator or in the oven.
Take the mix and spread it thin on either dehydrator trays with liners or oven pan.
In the dehydrator let dry for at least 24 hours. In the oven it you can put it on the lowest possible setting, crack the oven door and cook until mix is crisp. Obviously the dehydrator is the better way to go economically, but if you don’t have one then you can use your oven.
